• 100 dandelion flower heads (yellow parts only)
• 500ml water
• 400g sugar
• 1 lemon, sliced
• 1 tsp vanilla extract (optional)
1. Rinse dandelion flowers and remove green parts (they make it bitter).
2. Place flowers, water, and lemon slices in a pot. Bring to a boil, then simmer for 15 minutes.
3. Strain through a fine sieve or muslin cloth.
4. Return liquid to the pot, add sugar and vanilla if using.
5. Simmer until reduced and syrupy (about 15-20 minutes).
6. Pour into a sterilised jar and seal. Store in the fridge.
