• Large handful wild mint leaves, washed
• 1 litre water• 2 tbsp honey or sugar (optional)
• 1 lemon, sliced
• Ice cubes
• Additional mint and lemon slices to garnish
1. Bring water to a boil in a kettle or pot.
2. Place mint leaves in a heatproof jug or teapot.
3. Pour boiling water over mint leaves and add honey/sugar if using.
4. Let steep for 5 minutes, then remove mint leaves.
5. Add lemon slices and let cool completely.
6. Refrigerate until cold.
7. Serve over ice with fresh mint and lemon slices.
