• 2 tablespoons fresh pine needles (from Scots pine or Eastern white pine - avoid yew, which is toxic!)
• 500ml water
• 1 teaspoon honey or maple syrup (optional)
• Squeeze of lemon (optional)
1. Collect young, bright green pine needles - the fresher, the better.
2. Rinse needles thoroughly and remove any brown sheaths at the base.
3. Chop the needles roughly to release their oils.
4. Bring water to just below boiling point.
5. Place pine needles in a teapot or mug, pour hot water over them.
6. Cover and steep for 5-10 minutes (longer for stronger flavour).
7. Strain into cups, add honey and lemon if desired.
8. Sip slowly and enjoy the forest vibes.
