• 500g ripe hawthorn berries, stems removed
• 300ml apple cider vinegar
• 200g brown sugar
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 tsp mixed spice
• 1/2 tsp cayenne pepper (optional)
• 1 tsp salt
1. Rinse the hawthorn berries thoroughly.
2. Place berries in a large pan with the vinegar and simmer gently for about 30 minutes until soft.
3. Push the mixture through a sieve to remove seeds and skins.
4. Return the liquid to the pan, add the remaining ingredients.
5. Simmer gently for 15-20 minutes, stirring occasionally until thickened.
6. Pour into sterilised bottles or jars while hot.
7. Seal and allow to cool before storing in the fridge.
8. Use anywhere you'd use regular ketchup – perfect with chips or in sandwiches.
